This type of grape has been growing there since the 14th century. It is also thought that the Verdicchio varietal may be indigenous to the Marche. There are clones which share similar genetic info as the Trebbiano and Grecogrape varieties grown in the Lombardy and Soave areas.<br />
<br />
The wine is not very aromatic, but it does offer elegant armomas of citrus and nuts, in particular, lemon and bitter almonds. Often, the grape lends itself well to the production of spumante (sparkling) wines, a specialty on the Adriatic coast.
It is best mached to broad bean salad with peanut dressing, fish and the very tasty, roasted peppers.

The name roughly translated is "old house of the king". <i>Vieux Château du Roi</i> or VCR is a name that wine kits makers' use to represent <i>Château Neuf Du Pape</i> ("new house of the pope") like wine blends. The original name was coined from the time when Pope Clement V moved to Avignon in 1305 due to a conflict between the Papacy and the French Crown in the historic region in the southern Rhone Valley in France. Apparently, the Pope was an avid wine lover. Aside from being infatuated with wine, Pope Clement V's other memorable historical note was that he was ultimately responsible for suppressing the order of the Knights Templar.<br />
<br />
Getting back to the subject of wine, in California, VCR is produced from a blending of a variety of grapes to imitate the complexities possessed by the original <i>Château Neuf Du Pap</i>e. Such attributes as the ripeness of the grapes and the oak barrels used in ageing the red wine creates a lush wine with a polished texture. <br />

From time to time,
however, we are asked to adjust our recipes to achieve a slightly
different result. The most common change we are asked about is
reducing the sweetness of a given wine. Many wines can be made less
sweet by adjusting the recipe – something my wife usually does when
she makes Riesling. At other times customers may have sensitivity to
the preservatives or stabilizers used and we adjust the ingredients
accordingly.

Occasionally we are
asked by a customer for a match to their favourite wines when we do
not have a kit of that type. An example of this came from a
customer who was looking to make a wine comparable to Barefoot
Moscato - a popular, lower alcohol wine with a sweet and fruity
taste. In order to meet the customers need, a custom recipe was
crafted by the Winemaker at the Wine Kitz Head Office that would
match the profile of the wine. This recipe uses a Traditional
Vintage Piesporter white wine kit with the concentrate divided
between a base and a sweet reserve with adjustments to the
stabilizing agents and procedures. The result is a sweet, fruity
wine with the higher sugar (~64g/L R.Sugar) and lower alcohol (~9%),
and comparable to a Moscato.

to Australia in 1831 by the Scotsman James Busby, who is known as the "father of Australian viticulture". He had travelled to Europe to collect cuttings from vines primarily from France and Spain for introduction to Australia. <br />
The wine is often powerfully flavoured and full-bodied. Recently, Australian Shiraz producers have started to add up to 4% Viognier to their Shiraz to add apricot tones to the wine's nose and palate.
This full bodied wine pairs well with brisket (slow cooked BBQ), grilled lamb, London broil, beef stew and chili. Break out the BBQ!<br />

Oktoberfest is the
world's largest fair held annually in Munich, Bavaria, Germany
highlighting Bavarian culture since 1810. Similar festivals are
celebrated around the world and which also share a similar attribute
of consumption of vast quantities of beer. You might wonder what
Oktoberfest has to do with wine making, but there is a clear
connection to beer making, hence the reason for the Oktoberfest sale
on German wine kits and beer kits at the Wine Kitz stores in New
Minas, Digby and Bridgewater.<br />
<br />
Aside from the obvious
subject of beer, we will explore the world of German wine. Most
German wines are produced in the western side of Germany, primarily
along the river Rhine and its tributaries, with the oldest vineyards
dating back to the Roman era. Interestingly, more than 2/3's of the
wine produced in Germany is white. The better known wines include
<i>Liebfraumilch</i>, <i>Gewürztraminer</i>, <i>Piesporter</i> and
<i>Riesling</i>. <i>Riesling</i> is the benchmark grape in Germany
and is grown in most of the area in German vineyards. <i>Müller-Thurgau</i>
which was available as a limited edition wine in the stores earlier
this year, is an alternative grape to the <i>Riesling</i> providing a
more neutral flavour than <i>Riesling</i>. <i>Liebfraumilch</i> is a
semi-sweet white produced in Germany primarily for export. It's name
literaly means “beloved lady's milk”. <i>Piesporter</i> is a
light bodied wine ranging from dry to off-dry is made in and around
the village of Piesport on the north bank of the Mosel wine region.
Finally, <i>Gewürztraminer </i><span style="font-style: normal;">is
a grape variety with a pink to red skin colour, however, it is a
white wine grape. This wine has a sweetness with armomas of roses,
passion fruit and floral tones. The name literally means

wine. White Zinfandel is made from the Zinfandel wine grape, which would otherwise produce a bold and spicy red wine. As such, it is not a grape variety but a method of processing Zinfandel grapes. Rosé wines, also known as blush wine, is a wine that is somewhere in color between a white wine and red wine. While they can vary in color from pink wine, to salmon, to light red, rose wine doesn't quite fall into either the white or red spectrum.<br />
<br />
Pair White Zinfandel with light meat, including chicken, pork and lamb. The general rule with wine pairing is white meats with white wines and red meat with red wine. As a sweet wine, White Zinfandel is best paired with light flavours so that it is not completely overpowered. Possible white meat options include grilled chicken, pork chops, chicken kebabs or chicken sandwiches. Pair White Zinfandel with seafood. As with white meat, white wines are commonly paired with seafood, including any variety of fish, lobster, cockles, crab cakes, clam chowder, Digby scallops, fish and chips and grilled or steamed shrimp.<br />

same variety. Europe vintners only use the name Syrah.
Shiraz is the name given to the dark-skinned Syrah grape when grown in Australia and selected pockets of the New World. Though genetically identical, the stylistic differences between Shiraz and Syrah are pronounced enough to consider them distinct varieties. Shiraz is so important to Australian viticulture that it is the most planted grape variety in the majority of Australian vineyards and is virtually synonymous with marquee wine regions such as the Barossa Valley.<br />
<br />
Shiraz wines display firm tannins (although they are typically ripe and smooth, not abrasive like younger reds can be), a medium to full body, and the rich round flavours of black cherry, blackberry, plum, bell pepper, black pepper, clove, licorice, dark chocolate and smoked meat.<br />
<br />
Toffee notes if present come not from the fruit but from the wine having rested in oak barrels. The Shiraz variety gives hearty, spicy reds. While Shiraz is used to produce many average wines it can produce some of the world’s finest, deepest, and darkest reds with intense flavors and excellent longevity.<br />
<br />Shiraz is great for grilled meats or veggies, wild game, richly flavoured red meats, in particular ribs as well as beef stew and meat lover's pizza.<br /><br />

Back again, this aromatic wine grape variety, despite having a pink to red skin colour creates a white wine possessing a gentle spicy and rose petal aromatic experience. The variety has high natural sugar and the wines are white and usually off-dry, with a flamboyant bouquet of lychees. The name Gewürztraminer literally means "<i>Spice coming from Tramin</i>" or "<i>Perfume coming from Tramin</i>". Although the species originated in Tramin, Italy, it has been produced from the cooler regions of Australia from the Adelaide Hills, Eden Valley and the island of Tasmania. <br />
<br />
Gewürztraminer marries beautifully with rich, fatty dishes like pork and goose or ripe cheeses, as well as with the exotic spices of Moroccan, Indian, and Far Eastern cuisines.<br />

The name Gewürztraminer literally means "<i>Spice Traminer</i>" or "<i>Perfumed Traminer</i>". The name "Chianti" is synonymous of excellent wine world-wide. The origin of Chianti are the gentle hills located in the famous wine region of Tuscanny, between Florence, Siena and Arezzo. The region was rich of forests, water and game had the characteristics of the highlands, and was not easily accessible, preserving the region from the destruction of barbarian invasions after the fall of the Roman Empire. However, during the medieval period, Chianti was the centre of civil wars between Siena and Florence, each of whom wanted control over these lands. Many castles and fortresses in this area bear testimony to this difficult period of its history. Some time after this period of warfare, some of the valleys were cleared and cultivated and which continue to produce the grapes today.<br /><br />Today, there are at least seven zones defined by the Dalmasso Commission in 1932 which include Chitani Classico, Chianti Montalbano, Chianti Rufini, etc. Its primary red grapes are of the Sangiovese and Canaiolo lines, whereas, the whites are Trebbiano and Malvasia.<br /><br />This Tuscan treasure charms with bold, rich cherry fruit aromas and flavours of cocoa, vanila and ripe cranberries. Good tannis and a hint of oak make it a soft, balanced red.<br />

The grapes used to produce these kits were grown in California whose lineage of the grapes were originally sourced from the area around the community of Piesport on the left bank of the Mosel River in Germany. Interestingly, a large Roman grape pressing facility was unearthed at the <i>Piesporter Goldtröpfchen</i> vineyard site in 1985. This discovery clearly indicates the importance of the vines cultivated on the slopes of Piesporter since 3 A.D. The Romans recognized that the Mosel region provided ideal conditions and micro-climate for a successful viticulture. The slope with its east and west facing foothills, are well-protected from the cold winds, combined with the forest above the vineyards and deep, clayish slate soils ensure perfect water supply even during hot, dry summers.<br /><br />The white wines produced possess a natural, fruity sweetness in a presentation that one can fully enjoy a wine's fruitiness and armoas without having the slightest impression of an overly sweet wine. The name roughly translated is "old house of the king". <i>Vieux Château du Roi</i> or VCR is a name that wine kits makers' use to represent <i>Château Neuf Du Pape</i> ("new house of the pope") like wine blends. The original name was coined from the time when Pope Clement V moved to Avignon in 1305 due to a conflict between the Papacy and the French Crown in the historic region in the southern Rhone Valley in France. Apparently, the Pope was an avid wine lover. Aside from being infatuated with wine, Pope Clement V's other memorable historical note was that he was ultimately responsible for suppressing the order of the Knights Templar. Getting back to the subject of wine, in California, VCR is produced from a blending of a variety of grapes to imitate the complexities possessed by the original <i>Château Neuf Du Pap</i>e. Such attributes as the ripeness of the grapes and the oak barrels used in ageing the red wine creates a lush wine with a polished texture. <br />

The NDP Government, led by our Premier, Darrell Dexter, has a choice to make this week. They have to choose whether or not to intervene in the NSLC’s request to the NS Supreme Court for a permanent injunction to close three small u-vint businesses. And it is a choice. This is not a criminal matter before the courts, it is a civil one. No charges have been laid by the RCMP; no Crown Attorney is handling the application to the court. But someone is making this move forward, and making decisions about how we were investigated, how and when to prosecute us, and how to best force us out of the market. Who ever that is, works for the NSLC. And the NSLC comes under the responsibility of the Department of Finance. <br /><br />Minister Maureen MacDonald, has the choice to exercise ministerial discretion over this matter. She is not obligated to intervene, but as a senior member of government, it is her responsibility to act in a fair and reasonable manner. She can choose to consider just the regulations and ignore the inherent conflict of interest that exists in having the NSLC be both monopoly retailer and market regulator. <br /><br />The Premier and all his Ministers can choose to consider the impact this has on three businesses that have been charged and how the business environment in the province is affected. <br /><br /><b>Actions Needed</b><br /><br />Should the Minister and Premier decide to act, versus sit this out to see what happens in a court next Monday, there are things they can do. <br />
<ol>
<li>Have the NSLC withdraw their application to the court;</li>
<li>Have the NSLC cease any further legal action against u-vint operators until such time as the regulations and role of the NSLC in enforcement has been reviewed;</li>
<li>Order a review of the legislation and regulations in light of both public policy interests and public opinion. Work with industry participants, NSLC management and government representatives to establish clear rules and practises for the operation of u-vint services in Nova Scotia.</li>
</ol>
Taking action on this matter is straightforward. others. The simple truth is that the NSLC is afraid a small dent

private sector would move forward with interprovincial trade and
co-operation in liquor distribution.

One must wonder why the NDP government saw fit to grant NSLC such powers. I, for one, am outraged and hope that logic can prevail — at least in the courts.</i><br />

<i>The recent decision by the liquor corporation to try to close brew-it-yourself operations in Nova Scotia is yet another example of Gestapo-like tactics being endorsed by a government which supposedly represents the little people.<br /><br />Liquor licensing in Nova Scotia, as in other Canadian provinces, is a relic of Prohibition days when governments decided they had the moral and legal obligation to control the sale of alcohol. In reality, it was and is a massive tax grab. In Canada, unlike in the U.S., it fell short of outright prohibition, but resulted in the establishment of liquor licensing boards and commissions which ensured that all the profit from the sale of alcohol went directly into provincial coffers.<br /><br />In the 21st century, this premise is ludicrous. Alcohol is a commodity which should be subject to the same laws of supply and demand as any other consumable. There is no reason why there should not be privately owned wine, beer and liquor outlets, just as there are throughout Europe, the United States, and more recently in British Columbia and Alberta.<br /><br />The mom-and-pop stores which allow the average person to brew beer and wine at a modest cost should not only be lauded, but promoted. It is about time Darrell Dexter and his colleagues got their heads out of the sand and instead of giving millions to private corporations, provided a modicum of support for their supposed constituents.</i><br />

<i>For over 40 years, I’ve been an occasional home brewer of wine and beer. Now a senior, I find the lifting of heavy carboys difficult and, with limited space in an apartment, home brewing is no longer an option. U-brew is the only way for me to continue my hobby; with the heavy lifting done for me, I can do the rest.<br /><br />It’s time for the Dexter government to get with the times and simply treat Nova Scotians the same as the residents of our neighbouring provinces. The spin that they are trying out, regarding protecting our health, is a non-starter; it’s all about tax. The NSLC does every-thing in its power to push product out the door with bright new stores, sales and promotions, and then it wants to talk about health. Give me a break.<br /><br />Leave the U-brews alone and let us enjoy our simple little pleasures like the majority of other Canadians.</i><br />

<i>As a long-time NDP supporter, I was dismayed to hear Maureen MacDonald admit that she was content to keep on the books a provincial law (on in-store wine making) whose purpose she could not explain. This week marked our first month’s anniversary of taking over the
Wine Kitz New Minas store as new owners. On Wednesday, January 9, we
were served with legal papers saying that the Nova Scotia Liquor
Commission (NSLC) was seeking an injunction against us in the NS Supreme
Court two days later that, if granted, would have forced us to close
our store. Our business, and two others in the province, was selected
for prosecution in an attempt to intimidate all stores offering u-vint
services to cease doing so.<br />

The NSLC operates with the full authority of the government of Nova
Scotia, and on Thursday the Minister responsible, Maureen MacDonald
stated that while u-vints are legal and common in other parts of Canada,
they would not be legalized in Nova Scotia. She told the media that
companies providing this service should be prosecuted.<br />

Given our situation, we felt there was no alternative but to try to
resolve this matter with the NSLC and on Thursday we voluntarily closed
our in-store wine making operation and stopped offering the service. As
a result, we were removed from the NSLC’s request for an injunction on
Friday. The judge gave the other two stores named in the action an
extension until January 28 to allow them time to seek appropriate legal
representation. <br />

From a small business standpoint, the closing of our in-store winery
for any extended period will be catastrophic, and may well lead to the
ultimate closure of our store and the loss of our investment. When we
were served with papers this week, we were in the process of obtaining
premises and hiring staff for another store in Digby. These plans are
now on hold. <br />
<br />
We are new residents to the province, and new to this business, but
we came here with the intent of earning a living as small business
owners in rural Nova Scotia. What we have been faced with this week
shows that the province does not provide a business climate for people
like us. All we can do is take on the fight to operate our business,
protect our investment, and have the law that prohibits u-vint services
and grants the NSLC such extraordinary powers to prosecute small
business struck down. <br />
